Comfort food for the cold temps

The cold temps of last week made us crave warm comfort food. Here's a meal we threw together in 30 minutes.

Open-faced burger with savory mushrooms and balsamic onions
with sweet potato fries

Mushrooms:

Clean and cut mushrooms into quarters (we used baby portabellos)
Cook in 1TBS of butter and 1TBS of olive oil (adjust accordingly for quantity - we used 8 mushrooms)
Add 2tsp of worchestire sauce after mushrooms are cooked half-way through
Add a small pinch of nutmeg for the final minutes of cooking.

Onions:
Slice onion and separate into rings (we used two slices of a yellow onion making roughly 16 rings)
Pour balsamic vinegar into small saute pan (we used a pear balsamic vinegar, roughly a half of a cup to 3/4 cup)

Cook on medium, stirring the onions into the vinegar
Be mindful that the vinegar will become syrupy and could burn easy. If the vinegar is not sticking to the onions, this is okay. Once you turn off of the heat, let them sit in the vinegar, where they will gel together.

Hamburger:
Season and cook patties to your liking

Bread:
We used a hearty country bread, left over from the week before. For a mayo, we mixed 1/2tsp of horseradish into 2TBS of mayo with a pinch of pepper for that upgraded taste. Use the leftovers as a dipping sauce for your fries - yum!

Assemble (once everything is cooked):
Bread
Horseradish mayo
Hamburger patties (we sliced ours in half lengthwise to keep the height down)
Slice of provolone cheese
Onions
Mushrooms

Sweet potato fries:
Bought in the freezer section of grocery store; cook and season according to package

Viola! A tasty meal in 30 minutes or less. (note: this meal could be made with chicken or eggplant for those non-beef eaters)
