Flounder with Salad and Goat Cheese Croquette
Okay, so we cheated on the Flounder. Why? Because I cannot find a better recipe than the frozen flounder fillets at Sam's Club. Plus, we had it on hand and why not use what you've got?
Salad
Toss a salad mix with balsamic vinaigrette (left over from our bread salad)
Goat Cheese Croquette
Slice tubular goat cheese into 1/2 inch sections. Place in the freezer until you are ready to use.
Prepare 3 small bowls for dredging: 1 with a beaten egg, 1 with flour and pepper, and 1 with panko crumbs.
Heat olive oil in a small saute pan on medium high.
Dredge the goat cheese in flour mixture, then egg, then panko.
Fry in olive oil until golden brown. Be sure not to handle too much.
Plating
Place the fish on the plate first with the salad on top of this.
Set the croquette on the salad and serve with a wedge of lemon.
Serve with a cherry 7-up on the side, for a little sass.
