Here's our little bit of (altered) Greece in Oklahoma...
Greek burgers with Rice and Tsatziki
Burgers:
We usually use lamb for this, but our lamb supply was not looking the freshest. We opted for hamburger - it's not the same, but it works.
1lb lamb (or hamburger) meat
1/4 cup onion (we grate it into the meat instead of chopping it)
1/4 fresh parsley
1 tsp dried oregano
Salt and Pepper to taste
Mix and shape into patties - cook as you wish (grill, grill pan, oven, smoke stack...)
Rice:
We prefer a long-grain rice, but opted for Minute Rice tonight.
Tzatziki:
Peel, seed and shave a cucumber into a bowl using a cheese grater.
Mix in 1/2 minced garlic clove and 2 tsp fresh lemon juice.
Add 1 C plain yogurt (we prefer Greek yogurt b/c of the thickness and tang)
Finish with 1 tsp dried mint (we used oregano b/c I don't like the sweetness of the mint) and a pinch of salt and pepper.
Stir together and refrigerate for a minimum of 10 minutes.
Lavash bread:
Cut and heat in an oven (350 degrees) for 5 minutes. You can use pita bread if you cannot find the Lavash bread.
Serve patties over rice with tzatziki, chopped tomatoes and chopped onions. (Travis leaves out the onions since he is not a fan)
And there is it, a little bit of Greece in our own kitchen!
