Shrimp with Orzo
I keep a bag of jumbo, frozen, cooked shrimp on hand for quick meals and get-togethers. This meal is perfect for this. Just run cool water over the shrimp to defrost and ta da! Shrimp!
Orzo is a quick-cooking, rice-like pasta. It is the perfect amount of pasta when you don't want anything too heavy. Cook in salted water to al dente (pasta that is soft with a bite).
We added four things to the shrimp and orzo:
- cut red pepper for a cool crunch
- chopped fresh spinach for nutrients
- pine nuts (I love pine nuts for a salty crunch. Toast in a small saute pan.)
- Lemon sauce
- 2 TBS olive oil
- lemon zest of one lemon
- juice of one lemon (2 TBS)
- salt and pepper to taste
- mix and toss with the orzo, shrimp and add-ins.
This meal is a perfect meal for those nights that you do not have time to cook. It is light, refreshing and simple.
