30 days, 30 dinners - Meal #2

This dish caused quite a stir in our house. How so, you ask? Travis set off the fire alarm, twice which in turn calls the fire department if you don't answer the phone quickly. (who knew that garlic burns really fast in a grill pan!?) Thankfully, after quick steps to deactivate the alarm as a whole and some quick dialing to the alarm company we were able to keep the men in red at bay.

Anyways - here goes for the second of our 30 meals...
Garlic marinated Chicken, roasted potatoes and sugar-glazed carrots
(adapted from our favorite cookbook - Everyday Food)


Chicken:
Pound out to 1/2 inch thickness
Crush 2 cloves of garlic and mix with 1/4 cup of oil
Add salt and pepper to taste
Marinate in a baking dish for 20 minutes
Grill or bake at 400 degrees for 20-30 minutes

Potatoes:
Wash a quarter small potatoes of your choice (we used red and golden)
Mix together 1tsp of (each) salt, pepper, thyme and garlic pepper
Use a large zippie bag (or bowl) and put the potatoes in it
Pour 3 TBS of oil over potatoes; add spice mixture
Toss and pour onto a baking sheet
Bake at 400 degrees until tender (20-30 minutes)

Carrots:
Pour 1/2 cup of water into a saute pan
Add 2 TBS of butter and 1.5 TBS of brown sugar
Add carrots
Bring to a boil and lower heat to simmer for 10 minutes or until sauce has thickened
Salt and Pepper to taste

Yeah...this wasn't our favorite meal of the week...solid and stable, but lacking flare.
