30 days, 30 dinners - Meal #15 Swiss Steak

This week's meals include some of our favorite comfort foods. I don't know why we are expecting the need to be comforted, maybe its the crazy busy week at both of our jobs, or the ease of comfort food in prep time or we're just craving some good ole' "Mom food". Tonight's meal is one of my top three favorite comfort foods (anything with mashed potatoes ranks high in my books) that my Mother used to make for special occasions.

Swiss Steak with Mashed Potatoes

Swiss Steak
2 lbs of round or Swiss steak
Cut the steak into manageable pieces slightly smaller than your palm
Using a meat mallet, pound the meat to tenderize it.
Dredge in flour and brown in a skillet until just browned (do not worry about cooking it completely)

Using a crock pot (if you don't have a crock pot, you can use a baking pan and cover it with foil), pour one 14 oz can of tomato, a splash of Heinz 57 and one can of water sauce into the bottom. Place the meat into the crock pot and cover with the following chopped vegees:
- Green bell pepper
- 3 stalks of celery
- 1/2 yellow onion
- 10 mushrooms
(I chop mine in large pieces so Travis can pick them out)

Simmer for a minimum of two hours. Best results are achieved when this cooks for at least four hours.

Potatoes
Cook and mash to your liking.

Pour the Swiss steak over the mashed potatoes and enjoy! A favorite of mine!!
